		<description>My starter&#039;s name is Phyl (yes, the Phyl from our challenge).  I named it after Phyl as when I first made my starter it didn&#039;t look quite right so I e-mailed Phyl, as he seemed to have so much knowledge.  He encouraged me to be patient and not throw it out, and it actually came back to life.

		<description>My starter&#039;s name is Biddy and she&#039;s been behaving very well so far.   I also agree that time and patience will lead us all to the perfect sourdough bread and that our final starters are eventually the product of our environment, no matter where the initial starter came from.  Great looking sourdough.... good job!</description>

The density of loaves has to do with so many things that it is hard to pinpoint one cause.  Could be your starter just doesn&#039;t have much get up and go, or it could be that the loaves needed more time to rise (as in my case, with the cold kitchen).  You could also try Sally&#039;s stretch and fold method rather than traditional kneading - her bread turned out tall and full of beautiful holes.</description>
