You made my day with this post! LOL! My panettone had a beautiful rise - even though I didn't use osmotolerant yeast or fresh yeast.

Aww...your prayers seem to have worked. The first rise was just beautiful -- it almost doubled in size! Am now an hour into the second rise, however, and they haven't grown at all. I'm getting worried...we'll see. I just hope they turn out as pretty as yours!

I'm so sorry to worry you! Hopefully, you turned up the heat in your house and the dough is rising perfectly for you. Or you prayed to the bread gods and they listened. Either way, I'm sending you lots of "rising" energy, in hopes that you don't have to stay up all night when a big holiday is on its way. : )

This post terrified me! It's almost 5 pm and my dough is still resting from the lukewarm water stage. I didn't order the special yeast either so I guess I may be pulling an all-nighter. Sigh... Yours looked lovely though!

I love your saga of the Panettone, and can totally relate to the sticky dough and the non existent rises or oven springs. I am actually going to try again with fresh yeast and a very active sourdough culture, so hopefully the second time will be better.

A converted panettone lover, never would have believed it. I too was scarred by childhood fruitcake memories. I say cross it off the list and move on, it is a while before we hit stollen...

Yeah, Mags, I got a little wound up about it! Lol.

Cindy, I've done that so many times - put an ingredient I don't like in something, thinking that maybe I would like it in the recipe. Hardly ever works for me, either. Thanks for photo compliment!

Loved reading your saga! I also hate candied fruit so I used dried cherries, cranberries and apricots too. Maybe I should have tried whiskey instead of rum. I hated this bread! But I'm not sure why I'm surprised since I hate rum. My husband is still nibbling the big one I made. Maybe I'll try it toasted.
Your photos are lovely!

Janice, I chuckled my way through reading your post...LOL! You had one heck of a time with this one, didn't you. It looks fabulous and it sounds like it was worth your wait. We really enjoyed this bread too (and really thought we wouldn't.)
